Despite the addition of cheese, this potato casserole is more a variation on scalloped potatoes than it is an "au gratin". Layered in with the potatoes are some thinly sliced, sautéed onions, fresh thyme leaves and a modest amount of grated Fontina
Ingredients:
3 lbs Yukon gold potatoes, peeled and very thinly sliced
3 tablespoons butter
2 medium onions, peeled and thinly sliced
1 clove garlic, very finely chopped
2 tablespoons fresh thyme leaves
Salt and freshly ground black pepper
1 cup Fontina cheese, grated
1/2 cup cream
1 to 1-1/2 cups whole milk
