INGREDIENTS
36 Barcat oysters, liquor reserved
1 cup sweet onion, finely minced
2 tablespoons garlic, finely minced
1⁄2 cup Virginia white table wine
1 pint heavy cream
1⁄2 cup country ham, finely julienned
1⁄2 cup scallions, green part only, finely sliced
zest of 1 lemon
juice of 1 lemon
cayenne pepper to taste
salt and pepper to taste
1 tablespoon canola oil
8 slices of toasted white bread, crust removed
