2 sticks cut into 1/2 inch chunks unsalted butter
1/2 c. ice water
2 lbs. yellow yukon gold .potatoes
1 1/4 c. crème fraîche
1 TBLS.kosher salt
1/2 t. black pepper
pinch grated.nutmeg
2 garlic cloves,minced
2 t.thyme
1 egg yolk
1 Tbls. cream or creme fraiche.
