Savory Italian Sausage Bread Pudding

INGREDIENTS
1/4 cup butter
1 pound Italian sausage, casings removed (optional)
1 cup onion, diced
1 cup celery, diced
2 cloves garlic, chopped
2 tablespoons sage, chopped (or 2 teaspoons dried)
1 tablespoon rosemary, chopped (or 1 teaspoon dried)
1 tablespoon thyme, chopped (or 1 teaspoon dried)
salt and pepper to taste
5 eggs
1 1/2 cups milk
1 1/2 cups cream
2 cups gruyere cheese, shredded (or swiss, gouda, cheddar, mozzarella, etc.)
1 pound Italian loaf (or French loaf), (day old) cut into 1 inch cubes (gluten-free for gluten-free)
1/4 cup parmigiano reggiano (parmesan cheese), grated
