1/2 cup (1 stick) butter

DRY INGREDIENTS 1 cup flour, fluffed to aerate before measuring or 133 grams

1 cup cornmeal, preferably stone-ground, fluffed to aerate or 160 grams
•
3 tablespoons sugar
•
1 tablespoon (yes, a whole tablespoon!) baking powder
•
1/2 teaspoon baking soda
•
2 teaspoons chili powder
•
1 teaspoon table salt
•
1/4 teaspoon black pepper
•
1/2 cup fresh or frozen corn kernels
•
1 small jalapeño pepper, seeded, deveined and finely diced (see TIPS)
•
1/4 red bell pepper, seeded, deveined and finely diced
•
2 tablespoons fresh cilantro, chopped
•
12 cilantro leaves for muffin tops, optional but pretty!
