1 cup chopped yellow onion
2 carrots, chopped
2 cloves garlic, minced
1 teaspoon vegetable oil, if needed
6 cups beef stock or 6 cups beef broth
1 teaspoon dried basil
1/2 teaspoon salt, to taste

1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can tomatoes with juice, coarsely chopped
1/4 cup chopped parsley
1 zucchini, quartered lengthwise,and sliced
8 ounces mushrooms, sliced
1 (9 ounce) package fresh cheese ravioli
