INGREDIENTS
2 tablespoons olive oil, (divided)
19 ounces (538g) Italian sausage (hot or mild)
1 cup (150g) finely diced yellow onion, ((~1 small onion))
1 cup (145g) peeled and finely diced large carrots, ((~2-3 carrots))
2 teaspoons minced garlic ((~3-4 cloves))
3 tablespoons unsalted butter
1/4 cup (33g) all-purpose flour
5 cups (1,200g) chicken broth or stock ((I recommend Swanson's chicken stock))
1 ounce package (12 oz; 340 g) three cheese tortellini ((See Note 1))
1 and 1/2 teaspoons Italian seasoning
3 ounces (4 cups lightly packed; 100g) fresh baby spinach (stems removed and coarsely chopped)
2 cups (460g) half and half (or heavy cream)
salt and pepper, (to taste)
Freshly grated Parmesan cheese, (to preference)
Optional: crusty baguette for serving
