1 cup milk
1/2 cup uncooked quick-cooking grits
2 cups (8 oz.) shredded sharp Cheddar cheese
1 tablespoon fresh thyme leaves
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, lightly beaten
SAUSAGE FILLING
1 (19-oz.) package mild Italian sausage
1 tablespoon canola oil
2 large red bell peppers, sliced
1 medium-size red onion, sliced
3 garlic cloves, minced
1 (14.5-oz.) can diced tomatoes with garlic and onion, drained
1/4 cup butter
1/4 cup all-purpose flour
1 1/2 cups reduced-sodium or organic chicken broth
1 1/2 tablespoons grape jelly
1 teaspoon red wine vinegar
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
