Sausage Lentil Soup

INGREDIENTS
1/2 lb. dry lentils
2 Tsp. olive oil
1 small onion, chopped
1 stalk celery, chopped
1 clove garlic, minced
1/2 lb. bulk Italian sausage, mild or hot-your preference (or smoked ham)
1 (14oz.) can diced tomatoes (optional)
2 cups beef or chicken broth (I like beef)
2 cups water
salt and pepper to taste
Sort and rinse lentils
