Sausage Gravy & Biscuits

INGREDIENTS
For the Gravy:
3 tablespoons bacon grease or butter (bacon grease strongly recommended as it will produce the most, and best, flavor)
12 ounces bulk pork sausage (click link for homemade sausage recipe!)
¼ cup finely chopped yellow onion
⅓ cup all-purpose flour
4 cups whole milk (can substitute a portion with heavy cream of half and half for even creamier results)
1 cube chicken bouillon (or 1 teaspoon chicken bouillon granules)
¼ teaspoon salt
½ teaspoon freshly ground black pepper
Hot sauce or cayenne pepper for heat (optional)
For the Buttermilk Biscuits:
1½ cups all-purpose flour
1½ cups cake flour
4 teaspoons baking powder
¼ teaspoon baking soda
1 tablespoon sugar
1 teaspoon salt
½ cup plus 2 tablespoons cold unsalted butter, cut into pieces
1 cup chilled buttermilk
