whole wheat apple cinnamon pancakes

Went to a pumpkin patch/apple orchard and bought a peck of apples. Decided to try something different and adapted this recipe from Creme De La Crumb.com. Everyone enjoyed them!

Ingredients

  • 1 cup milk
  • 1 1/2 tablespoons vinegar
  • 1 cup whole wheat flour
  • 3 tablespoons sugar
  • 1 1/2 teaspoons cinnaomon
  • 1 1/2 teaspoons apple pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 - egg
  • 2 tablespoons oil
  • 2 tablespoons butter
  • 2 large apples, peeled, cored and diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1/3 cup maple syrup

How To Make whole wheat apple cinnamon pancakes

  • Step 1
    Mix together milk and vinegar and allow to sit for 5 minutes to curdle.
  • Step 2
    Whisk flour, sugar, cinnamon, apple pie spice, powder, soda and salt together in a large bowl.
  • Step 3
    Once the milk has curdled, whisk in oil and egg, then add wet ingredients to dry and stir until combined.
  • Step 4
    Add butter, apples, brown sugar, cinnamon & apple pie spice to medium sauce pan. Stir over medium heat about 10 minutes until apples are very tender. Stir in syrup. Serve over warm pancakes.
  • Step 5
    Spray griddle or pan with cooking spray and heat to medium high heat. Cook pancakes until edges begin to look dry. Flip and cook until done.
  • Step 6
    * I also made cinnamon butter for the pancakes just in case. I took 2 oz. 1/3 fat cream cheese, 1/2 stick butter, 1 T. cinnamon & 1 T. apple pie spice and creamed them together. So tasty and there was a lot left over for toast tomorrow!
