whole wheat apple cinnamon pancakes
Went to a pumpkin patch/apple orchard and bought a peck of apples. Decided to try something different and adapted this recipe from Creme De La Crumb.com. Everyone enjoyed them!

Made 7 med. pancakes so depending serves 3-4.
Ingredients
- 1 cup milk
- 1 1/2 tablespoons vinegar
- 1 cup whole wheat flour
- 3 tablespoons sugar
- 1 1/2 teaspoons cinnaomon
- 1 1/2 teaspoons apple pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 - egg
- 2 tablespoons oil
- 2 tablespoons butter
- 2 large apples, peeled, cored and diced
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon apple pie spice
- 1/3 cup maple syrup
How To Make whole wheat apple cinnamon pancakes

Step 1Mix together milk and vinegar and allow to sit for 5 minutes to curdle.

Step 2Whisk flour, sugar, cinnamon, apple pie spice, powder, soda and salt together in a large bowl.

Step 3Once the milk has curdled, whisk in oil and egg, then add wet ingredients to dry and stir until combined.

Step 4Add butter, apples, brown sugar, cinnamon & apple pie spice to medium sauce pan. Stir over medium heat about 10 minutes until apples are very tender. Stir in syrup. Serve over warm pancakes.

Step 5Spray griddle or pan with cooking spray and heat to medium high heat. Cook pancakes until edges begin to look dry. Flip and cook until done.

Step 6* I also made cinnamon butter for the pancakes just in case. I took 2 oz. 1/3 fat cream cheese, 1/2 stick butter, 1 T. cinnamon & 1 T. apple pie spice and creamed them together. So tasty and there was a lot left over for toast tomorrow!
