I found this recipe on the wall of that old farmhouse mentioned in my other posts. A piece of history written on the kitchen walls. As I sat a re wrote every recipe I could make out with the years gone by and these old walls hidden behind a subwall my husband was tearing out to re model. It was like a hidden treasure. Of course it took my husband a bit longer to finish the job as I wrote all these recipes down. But it was so worth it, I hope you think so too.

Ingredients
- 1 small eggplant, peeled and diced
- 2 small zucchini, sliced
- 2 small onions, chopped
- 1 medium fresh tomato, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 1/2 teaspoon basil
- 1/4 teaspoon pepper
How To Make vegetable caviar

Step 1Saute' eggplant, squash, onion and tomato in a oil until soft. Stirring constantly. Add remaining ingredients.

Step 2Put through a sieve, or into a blender, or served as is. good hot or cold.

Step 3Makes 4 cups.
