If you are vegan or have vegans to feed, or even someone with lactose intolerance, this is a great substitute for ricotta cheese to use in lasagne, on pasta, or just to dip veggies or bread into.

Ingredients
- 1/2 tablespoon non-hydrogenated vegan margarine
- 1 package silken tofu - thoroughly mashed
- 1/2 cup nutritional yeast
- 1/2 cup vegan soy milk
- 3 tablespoons vegan mayonnaise
- 1 teaspoon paprika
- 1 teaspoon salt
- 3/4 teaspoon spike seasoning
- 1/2 teaspoon dry mustard
How To Make vegan ricotta "cheese"

Step 1Melt margarine on stove on medium heat.

Step 2Add the mashed tofu, mix, turn up temp.

Step 3Add yeast, paprika, salt, mixed seasoning, mustard powder, and mayo, and mix well.

Step 4Saute for 3-4 min. then add soymilk, lower temp and let simmer 5 min, stirring occasionally.
