My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something our Moms could make, is there? =)

Ingredients

  • 16 ounces can of salmon
  • 1 teaspoon lemon juice
  • 2 teaspoons onion grated
  • 1 teaspoon horseradish
  • 1/4 teaspoon salt
  • 1/4 teaspoon liquid smoke flavoring
  • 1/2 cup chopped pecans
  • 3 tablespoons snipped parsley
  • 8 ounces cream cheese

How To Make salmon log

  • Step 1
    Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.
  • Step 2
    Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.
