salmon log
My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something our Moms could make, is there? =)

Ingredients
- 16 ounces can of salmon
- 1 teaspoon lemon juice
- 2 teaspoons onion grated
- 1 teaspoon horseradish
- 1/4 teaspoon salt
- 1/4 teaspoon liquid smoke flavoring
- 1/2 cup chopped pecans
- 3 tablespoons snipped parsley
- 8 ounces cream cheese
How To Make salmon log

Step 1Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.

Step 2Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.
