pumpkin cream cheese spread
I've made this with pumpkin AND sweet potato. I love this on bagels (especially cinnamon) and I've also used it as filling in muffins & cupcakes. It's good on so many things..... crackers, fruit, tortilla or pita chips (believe it or not!), homemade bread, etc.

Makes 3 cups.
Ingredients
- 2 packages (8 oz each) cream cheese, softened
- 1 cup canned pumpkin
- 1/2 cup granulated sugar
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract

Step 1Beat all ingredients in a medium mixing bowl with an electric mixer on medium speed until smooth. Cover and refrigerate for at least 1 hour before using.
