pumpkin butter
Here's a recipe that my mother used for years and since the holidays aren't that far away, I thought I would post it. It is easy to make and give some of this for gifts. Yummy on homemade bread or rolls and scones, english muffins or any bread plus great in frosting for added flavor

Ingredients
- 1/4 cup dark brown sugar, packed
- 1 1/2 cups pumpkin
- 3/4 teaspoon cinnamon, ground
- 1/2 teaspoon each: nutneg, ginger, allspice
- 1/4 cup water
- 3 tablespoons sugar
- 1/4 teaspoon cloves
How To Make pumpkin butter

Step 1Combine the two sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a bowl. Mix well and then put in the microwave on high for 3 minutes. Add pumpkin and mix well and put back in the micro on high for about 5 minutes. Let cool and then refrigerate. Makes about 2 cups. For gifts, add the "butter" to decorative jars, seal, and label.
