This recipe is the icing for the Pineapple Cake that I posted.

Ingredients

  • 1 1/2 cups sugar
  • 1 stick butter
  • 1 cup evaporated milk
  • 1/2 cup pecans, in pieces
  • 1 cup coconut, flaked
  • 1 teaspoon vanilla extract
  • pinch salt

How To Make pineapple cake icing

  • Step 1
    In a large sauce pan, cook the sugar, butter and evaporated milk for about 6 minutes on medium-high heat.
  • Step 2
    Once thickened, add the pecans, coconut, vanilla, and salt.
  • Step 3
    Pour over the Pineapple Cake once the cake and icing have cooled.
