This recipe is the icing for the Pineapple Cake that I posted.

  • 1 1/2 c
  • 1 stick
  • 1 c
    evaporated milk
  • 1/2 c
    pecans, in pieces
  • 1 c
    coconut, flaked
  • 1 tsp
    vanilla extract
  • pinch

How to Make Pineapple Cake Icing


  1. In a large sauce pan, cook the sugar, butter and evaporated milk for about 6 minutes on medium-high heat.
  2. Once thickened, add the pecans, coconut, vanilla, and salt.
  3. Pour over the Pineapple Cake once the cake and icing have cooled.
