How to Make Perfect Lemon Curd
- 1Strain lemon juice through a fine sieve to remove any pulp or seeds.
- 2In a microwave-safe glass bowl, melt butter. In a separate bowl, whisk together lemon juice, sugar and eggs.
- 3Slowly whisk lemon juice mixture into butter, whisking constantly to avoid curdling.
- 4Microwave on HIGH at 1-minute intervals, whisking well, until curd coats the back of a spoon. Three to four rounds in the microwave should do it.
