I tweaked a couple of recipes to my liking and came up with this. My momma used to make us grilled pimento cheese sandwiches for lunch and this is great cooked this way.

Ingredients
- 8 ounces pkg sharp yellow cheddar cheese, shredded
- 8 ounces pkg sharp white cheddar cheese, shredded
- 4 ounces jar pimentos, undrained
- 1/4 cup mayonnaise, use more if too dry
- to taste - salt, pepper, hot sauce
How To Make pattycake's pimento cheese

Step 1Mix all ingredients. cover and refrigerate.

Step 2It spreads better if left out of the refrigerator about 30 minutes before eating.
