I tweaked a couple of recipes to my liking and came up with this. My momma used to make us grilled pimento cheese sandwiches for lunch and this is great cooked this way.

Ingredients For pattycake's pimento cheese

  • 8 oz
    pkg sharp yellow cheddar cheese, shredded
  • 8 oz
    pkg sharp white cheddar cheese, shredded
  • 4 oz
    jar pimentos, undrained
  • 1/4 c
    mayonnaise, use more if too dry
  • to taste
    salt, pepper, hot sauce

How To Make pattycake's pimento cheese

    Mix all ingredients. cover and refrigerate.

    It spreads better if left out of the refrigerator about 30 minutes before eating.
