This was one of the many compound butters I made while in culinary school, and I love it as a quick sauce for homemade pasta, gnocchi and spaetzle.

Ingredients

12 oz
butter, room temperature
2 oz
parmesan cheese, grated
1/2 oz
parsley, finely chopped
1/2 oz
garlic, minced
1 Tbsp
lemon juice
1/2 tsp
white pepper

How to Make Parsley Compound Butter (for pasta)

Step-by-Step

  • 1In a large bowl, combine all ingredients and blend very thoroughly by hand. Form into the traditional tube shape wrapped in plastic wrap. Chill thoroughly before using.
