This was one of the many compound butters I made while in culinary school, and I love it as a quick sauce for homemade pasta, gnocchi and spaetzle.

Ingredients
- 12 ounces butter, room temperature
- 2 ounces parmesan cheese, grated
- 1/2 ounce parsley, finely chopped
- 1/2 ounce garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon white pepper
How To Make parsley compound butter (for pasta)

Step 1In a large bowl, combine all ingredients and blend very thoroughly by hand. Form into the traditional tube shape wrapped in plastic wrap. Chill thoroughly before using.
