I got this recipe from the father of one of my friends. If you love green olives, then you'll love this! I've taken this to parties and get togethers countless times, and it never fails that I get requests for the recipe. With it only needing 2 ingredients, it's a winner! I especially like this spread on bagels! It makes for a great lunch. This recipe can also be used with a can of black olives, but it comes out an unappealing gray color. I used THAT recipe for a Halloween party.

Ingredients For olive "butter"

  • 1 jar
    pimento stuffed olives
  • 8 oz
    cream cheese ( you can use fat free cream cheese which works well, too.)

How To Make olive "butter"

    Drain the olives, reserving a small amount of brine for later use if needed. Place the drained olives and cream cheese in a blender, or food processor and combine until smooth. Add some of the reserved brine if mixture is not of spreadable consistency. Store in the refrigerator in a covered container for up to 2 weeks. This is a great spread for crackers, or bagels!
