not quite tyrokafteri
We love Tyrokafteri, especially the spicy one. This recipe came about when I came up short on the amount of feta for the traditional one. I love Bulgarian feta better than Greek, as it has a much creamier texture and blends so well with the cream cheese.

Ingredients
- 4 ounces feta cheese
- 4 ounces cream cheese, softened
- 1 tablespoon plain Greek yogurt (or sour cream)
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, finely minced or pressed
- 1/4 teaspoon dried basil
- 1/4 teaspoon Greek oregano
- 1/8 teaspoon dried dill
- 1/8 teaspoon dried thyme
- 1/2 teaspoon lemon zest, optional

Step 1In a medium bowl, combine all the ingredients until smooth using a fork to mash everything together.

Step 2If needed, add more yogurt or olive oil A LITTLE AT A TIME to achieve your desired consistency. Too much olive oil can alter the taste. Too much yogurt can dilute the flavor of the feta. It should be spreadable but not thin.

Step 3Serve with pita chips or cucumber slices. You can make it look pretty by topping it with chopped Kalamata olives mixed with a bit of parsley and olive oil.
