My friends beg me to make this for their birthdays and Christmas. It is ridiculously easy and a little spicy. Duke's mayonnaise is the secret ingredient... it just doesn't taste the same without it!

Ingredients

  • 2 cups finely shredded sharp cheddar
  • 1 cup finely shredded italian cheese blend, or other white cheese
  • 1 medium jar diced pimentos, undrained
  • 2 tablespoons (heaping) duke's mayonnaise
  • 1- 1 1/2 tablespoons yellow mustard
  • 1 teaspoon crazy jane salt
  • 1 - 1 1/2 teaspoons emeril's essence
  • 1/2 - 1 teaspoons crushed red pepper flakes
  • - coarse ground black pepper, to taste

How To Make mary beth's spicy pimento cheese

  • Step 1
    Mix cheeses, pimentos, mayo and mustard until well-blended. Add spices and continue to stir until distributed throughout cheese mixture. Spice measurements may be adjusted to taste...I add more essence and red pepper for an extra spicy kick. Die-hard spice addicts may enjoy using pepper jack cheese for the white cheese.
  • Step 2
    Keep refrigerated. Excellent on sandwiches, crackers, celery or crispy breads such as pita chips or bagel chips.
