This butter goes great on steamed asparagus or broiled or poached fish that is piping hot.

1/2 csweet butter

1 tsplemon juice, fresh

2 tsplemon rind, grated

1 tspfinely minced fresh parsley leaves or 1/2 teaspoon dried parsley flakes

1 tspminced chives

1/8 tspdried tarragon
How to Make Lemon Herb Butter
- Cream the butter thoroughly, then add the lemon juice drop to drop, beating continuously
- Stir in the lemon rind, parsley,chives and tarragon until well blended.
- To keep this butter at its best flavor, freeze it if it isn't used within 3 to 4 days.
