This butter goes great on steamed asparagus or broiled or poached fish that is piping hot.

Serves:
1/2 cup

Ingredients

  • 1/2 c
    sweet butter
  • 1 tsp
    lemon juice, fresh
  • 2 tsp
    lemon rind, grated
  • 1 tsp
    finely minced fresh parsley leaves or 1/2 teaspoon dried parsley flakes
  • 1 tsp
    minced chives
  • 1/8 tsp
    dried tarragon

How to Make Lemon Herb Butter

Step-by-Step

  1. Cream the butter thoroughly, then add the lemon juice drop to drop, beating continuously
  2. Stir in the lemon rind, parsley,chives and tarragon until well blended.
  3. To keep this butter at its best flavor, freeze it if it isn't used within 3 to 4 days.
