This butter goes great on steamed asparagus or broiled or poached fish that is piping hot.

1/2 cup


1/2 c
sweet butter
1 tsp
lemon juice, fresh
2 tsp
lemon rind, grated
1 tsp
finely minced fresh parsley leaves or 1/2 teaspoon dried parsley flakes
1 tsp
minced chives
1/8 tsp
dried tarragon


1Cream the butter thoroughly, then add the lemon juice drop to drop, beating continuously
2Stir in the lemon rind, parsley,chives and tarragon until well blended.
3To keep this butter at its best flavor, freeze it if it isn't used within 3 to 4 days.
