Ingredients
- 2 cups cooked pumpkin, pureed
- 1/2 cup honey
- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/8 teaspoon cloves
- 1/4 teaspoon salt
How To Make honey-pumpkin butter

Step 1In a saucepan, combine all ingredients thoroughly.

Step 2Simmer uncovered on low heat for 35 to 40 minutes, stirring frequently until quite thick - the same consistency as stiff apple butter. To check, drop a spoonful on a chilled saucer. When as thick as you like it, ladle into jelly jars and refrigerate.
