Ingredients

  • 2 cups cooked pumpkin, pureed
  • 1/2 cup honey
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1/4 teaspoon salt

How To Make honey-pumpkin butter

  • Step 1
    In a saucepan, combine all ingredients thoroughly.
  • Step 2
    Simmer uncovered on low heat for 35 to 40 minutes, stirring frequently until quite thick - the same consistency as stiff apple butter. To check, drop a spoonful on a chilled saucer. When as thick as you like it, ladle into jelly jars and refrigerate.

    Makes 1 1/4 to 1 1/2 cups
