Ingredients

2 c
cooked pumpkin, pureed
1/2 c
honey
1 tsp
grated lemon rind
1 Tbsp
lemon juice
1 tsp
cinnamon
1/4 tsp
nutmeg
1/4 tsp
ginger
1/8 tsp
cloves
1/4 tsp
salt

Step-By-Step

1In a saucepan, combine all ingredients thoroughly.
2Simmer uncovered on low heat for 35 to 40 minutes, stirring frequently until quite thick - the same consistency as stiff apple butter. To check, drop a spoonful on a chilled saucer. When as thick as you like it, ladle into jelly jars and refrigerate.
3Makes 1 1/4 to 1 1/2 cups
