How to Make Honey-Pumpkin Butter
- In a saucepan, combine all ingredients thoroughly.
- Simmer uncovered on low heat for 35 to 40 minutes, stirring frequently until quite thick - the same consistency as stiff apple butter. To check, drop a spoonful on a chilled saucer. When as thick as you like it, ladle into jelly jars and refrigerate.
- Makes 1 1/4 to 1 1/2 cups
