herbie's pimento cheese
My Spouses Aunt use to make this for him when he was growing up....Unfortunately she never wrote it down so after her Death he figured he'd never be able to enjoy that particular "taste memory" again. With his help we think we have save the recipe closely enough no one else in the family can tell its not hers.... Please add your heirloom recipes...you never know how much joy you can still bring after your gone!

- 2# boxes velvetta cheese
- 2 cups mayonnaise
- 1/4 cup white sugar
- 1 cup sweet relish - undrained
- 6 ounces pimentos -drained
How To Make herbie's pimento cheese

Step 1Combine Cheese and Mayo in the Large Bowl of a stand Mixer and cream together

Step 2Add Sugar, continue Blending until sugar is dissolved. Mixture should be smooth and creamy

Step 3Stir in remaining ingredients. Refrigerate for 4 hours or overnight (... Improves with time.) Refrigerate any Leftovers.
