cilantro-spinach pesto
Cilantro makes a wonderful pesto and is a nice change to traditional basil pesto. Use on pasta or as a spread on crackers or bread. To spice this up - add cayenne or red pepper flakes to the food processor.

Ingredients
- 1/2 bunch fresh spinach
- 1/2 bunch fresh cilantro
- 3 cloves garlic, minced
- 1/3 cup parmesan cheese, grated
- 1/3 cup olive oil
- 1/4 cup walnuts
- salt and pepper to taste -- parmesan will add some salt so consider that when adding additional salt to pesto
How To Make cilantro-spinach pesto

Step 1Rinse spinach and cilantro and pat dry with paper towels. Remove stems from spinach and coarsely chop both.

Step 2Combine spinach, cilantro, garlic, cheese and walnuts in a food processor; process until finely chopped.

Step 3Add olive oil in a stream on high speed until smooth. `

Step 4Use this pesto on pasta or as a spread on bread or crackers.
