Cilantro makes a wonderful pesto and is a nice change to traditional basil pesto. Use on pasta or as a spread on crackers or bread. To spice this up - add cayenne or red pepper flakes to the food processor.

Ingredients

  • 1/2 bunch fresh spinach
  • 1/2 bunch fresh cilantro
  • 3 cloves garlic, minced
  • 1/3 cup parmesan cheese, grated
  • 1/3 cup olive oil
  • 1/4 cup walnuts
  • salt and pepper to taste -- parmesan will add some salt so consider that when adding additional salt to pesto

How To Make cilantro-spinach pesto

  • Step 1
    Rinse spinach and cilantro and pat dry with paper towels. Remove stems from spinach and coarsely chop both.
  • Step 2
    Combine spinach, cilantro, garlic, cheese and walnuts in a food processor; process until finely chopped.
  • Step 3
    Add olive oil in a stream on high speed until smooth. `
  • Step 4
    Use this pesto on pasta or as a spread on bread or crackers.
