caramelized onion jam
This condiment is so versatile! I love it in my savory tarts. It is also wonderful along side a meat dish. You can use it on sandwiches, like grilled cheese, tomato and onion tart sandwich! Countless ways to use this wonderful spread!

Ingredients
- 1/4 cup olive oil
- 3 large onions
- 3/4 cup sugar
- 3/4 cup apple cider vinegar
- 1 teaspoon rosemary
How To Make caramelized onion jam

Step 1Slice or fine chop the onions. Depends on how you like them. Just be sure they are fairly even in size.

Step 2In a large pan, heat olive oil. Add the onions and heat until golden brown. (about 15 minutes. Might take more)

Step 3When the onions are golden, sprinkle with the sugar and let it cook without stirring for 5 minutes. Then start stirring and cook until brown caramel forms (about 6 minutes)

Step 4Add the vinegar and rosemary and simmer on low heat until thickened. (about 5-10 minutes...watch for the mixture to thicken)

Step 5Take off heat and add a bit of salt to taste.

Step 6This spread can be refrigerated for 5 days. Serve it warmed or room temp. (even cold is ok in my book!
