This condiment is so versatile! I love it in my savory tarts. It is also wonderful along side a meat dish. You can use it on sandwiches, like grilled cheese, tomato and onion tart sandwich! Countless ways to use this wonderful spread!

Ingredients

  • 1/4 cup olive oil
  • 3 large onions
  • 3/4 cup sugar
  • 3/4 cup apple cider vinegar
  • 1 teaspoon rosemary

How To Make caramelized onion jam

  • Step 1
    Slice or fine chop the onions. Depends on how you like them. Just be sure they are fairly even in size.
  • Step 2
    In a large pan, heat olive oil. Add the onions and heat until golden brown. (about 15 minutes. Might take more)
  • Step 3
    When the onions are golden, sprinkle with the sugar and let it cook without stirring for 5 minutes. Then start stirring and cook until brown caramel forms (about 6 minutes)
  • Step 4
    Add the vinegar and rosemary and simmer on low heat until thickened. (about 5-10 minutes...watch for the mixture to thicken)
  • Step 5
    Take off heat and add a bit of salt to taste.
  • Step 6
    This spread can be refrigerated for 5 days. Serve it warmed or room temp. (even cold is ok in my book!
