caramelized onion-apple mayo
This mayo is so good! It originally came from part of a recipe I used when a Longaberger consultant. I didn't like the sandwiches they paired this with, but I just love the unique flavor of this mayo on my own sandwiches at home!

Ingredients
- 1 tablespoon unsalted butter
- 1 large yellow onion, diced
- 1 - granny smith apple, peeled, cored, diced
- 1 tablespoon cider vinegar
- 1 cup mayo
- 3 tablespoons whole grain mustard
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
How To Make caramelized onion-apple mayo

Step 1Melt the butter in a medium saute pan over medium heat until the butter foams. Add the onions and cook for 5 minutes or until translucent. Add the apple bits and cook for 5-7 minutes or until the apples and onions caramelize. Add the cider vinegar and cook for another 30 seconds. Remove from the heat and cool completely. Combine the remaining ingredients with the cooled apple-onion mixture. This mayonnaise may be prepared 1 day in advance and stored, covered, in the fridge.
