blue cheese compound butter

I love the succulence of butter melted on top of a great steak. In the middle of canning today I decided to make hubs a great dinner. So, thawed out a couple of rib eyes, stuck holes in a couple of sweet potatoes (so I wouldn't have to clean my oven on top of everything else I was involved in LOL) and made cheddar chive biscuits with fresh ground black pepper added in...just cause I could. Then I thought...butter on the steak..hmmm..and upped the ante with blue cheese, garlic and horseradish. YummmY!!

Ingredients

  • 1 stick unsalted butter - room temp
  • 1/3 cup blue cheese crumbles
  • 1 clove garlic - grated
  • 2 teaspoons fresh grated horseradish
  • 1/3 teaspoon kosher salt - more or less as you like
  • 1/4 teaspoon freshly ground black pepper

How To Make blue cheese compound butter

  • Step 1
    Add butter to a medium sized bowl and mash well with a fork
  • Step 2
    Add all other ingredients and mix well...with the same fork. Really mix it well so the flavors are distributed throughout the butter.
  • Step 3
    Scoop onto piece of cling-type wrap and, using the wrap, form into a log. Wrap well and refrigerate until about 15 minutes before you want to use it.
  • Step 4
    Slice into 1/4 inch medallions and, after you've flipped the grilling steak over, place butter on top and let it melt while steak finishes cooking.
