8 ozcream cheese, room temperature
1 Tbsphellmann's mayonaise
2drops green food coloring
1/2 mediumonion, finely grated
1 largecucumber, peeled and seeded
1-3 dash(es)tobasco sauce
1 pkgparty rye bread
How to Make Benedictine Spread
- Grate the cucumber. Place in cheesecloth and squeeze liquid out. Set aside.
- In a medium bowl, beat cream cheese til fluffy. Stir in cucumber and remaining ingredients except for the bread and crackers. Adjust the consistancy with more or less mayonaise. (I prefer a bit more mayo).
- Cover and chill at least 4 hours (overnight is better). Spread Benedictine on bread. You can top them with a thin slice of green olive or roasted red pepper. Place some in a bowl with crackers for dipping.
