Don't let the Anchovy scare you. This is a very tasty breadcrumb topping for a variety of dishes. You'll never know anchovies are in there.

  • 1/4 - 1/3 c
    olive oil, light
  • 6 - 8
    anchovy fillets
  • 4 clove
    garlic, minced
  • ·
    black pepper
  • 1 c
    panko bread crumbs
  • 1/2 c
    parsley flakes
  • 1/3 c
    parmigiano-reggiano, grated

How to Make Anchovy Breadcrumb Topping


  1. Heat the olive oil in a skillet over medium heat. Add the anchovies and stir until they melt away into the oil.
  2. Lower the heat, and add the garlic and some black pepper and stir 1-2 minutes.
  3. Add the breadcrumbs and cook until deeply fragrant and well toasted. Remove from heat. Cool and combine with the parsley and cheese.
  4. Store in the fridge in an air tight container.
