amish ham spread - my way
I make this delicious spread for hubby to take to work. He loves it for sandwiches or on crackers, for a quick snack. It's so easy to make. This is my version. This recipe is for 3 pounds of bologna...you can easily halve the recipe. Hope you enjoy! My photo's

Ingredients
- 3 pounds bologna ( i use eckridge all beef ) minced fine in food processor
- 4 tablespoons dill pickle chopped, or relish
- med - onion, chopped small
- 1 cup mayo or till your preferred consistency
- 2 tablespoons ranch dressing
- 1 1/2 tablespoons dijon mustard
- 1 - 2 teaspoons sugar ( optional ) this helps balance out the saltiness of the bologna
- pepper - to taste

Step 1I process bologna in food processor till pretty fine.

Step 2Place in large bowl; adding all other ingredients. Stirring till well blended. I don't measure mayo, I go by the thickness we prefer.

Step 3Refrigerate overnight, it is so much better after the flavors have time to mingle. Serve on bread or even crackers. Enjoy!
