This is a staple in Shanghai. By cooking the onions until browned give the oil a nutty flavor. It is used over noodles rice or to saute vegetable.

How to Make Scallion Oil

Step-by-Step

  1. Add oil to a large pot. Stir in the shallots and green onions. Cook over low heat for 30 to 45 minutes until the onions turn dark brown. Strain the oil through a fine mesh strainer pressing the onions to get all the oil out.
  2. Store in jar in fridge
