Can be tweaked to suit personal tastes, adding or subtracting amounts of spices. Can use regular breadcrumbs or Panko, but would advise extra processing for panko crumbs, to make them finer. This makes more than the commercial packaging, so store in airtight container for up to 2 months, and use amount as needed.

Ingredients

  • 3 cups bread crumbs (panko or regular)
  • 1/4 cup vegetable oil
  • 1/2 teaspoon onion powder
  • 1 tablespoon sweet paprika
  • 1 tablespoon sugar
  • 1 teaspoon celery salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon each dry basil, dry oregano
  • 1 tablespoon dry parsley
  • 1/2 teaspoon cayenns

How To Make make your own shake and bake for chicken or pork

  • Step 1
    Place all but oil in food processor bowl.
  • Step 2
    Pulse many times, to break down Panko into finer pieces, if desired, and to thoroughly mix all dry ingredients.
  • Step 3
    Place into heavy zip lock bag and add oil. Seal carefully (removing as much air as possible), then massage bag to completely distribute oil.
  • Step 4
    Season pork or chicken pieces with salt and pepper if desired, and shake in mix, or alternatley, dip in flour, then milk or egg wash, then in mix. OR spread meat with mayonnaise, then coat with mix.
  • Step 5
    Bake anywhere from 350 to 400 degrees, 25 to 40 minutes, depending on whether boneless or bone in, and size of pieces. Use thermometer and USDA guidlines for best test of doneness.
