Certainly you'll want to use this in iced tea but you'll find it delightful when you replace regular sugar with the lime sugar in baking. Try making lime sugar cookies.

Ingredients

6 - fresh limes or 12 key limes
2 1/2 cups granulated sugar

How To Make lime sugar mix

Step 1

Remove zest from limes in strips with a vegetable peeler and cut away any white pith from zest (pith imparts a bitter flavor).

Step 2

Chop zest (about 1/2 cup), then grind in a food processor with sugar until mixture is pale green with bits of zest still visible.
Step 3

Notes: Lime sugar may be made 3 days ahead and kept, chilled, in an airtight container. The sugar becomes aerated in the food processor so do not pack when measuring.
