homemade adobo sauce
I am not a fan of very hot, spicy stuff, so I rarely buy those chilies in adobo sauce. But what to do when you need a little bit of that sauce? While this is not by any means an exact substitute, it will fill the gap when the 'real deal' isn't crucial! PS I always have a tube of tomato sauce on hand for occasions such as this!

Ingredients
- 1 tablespoon tomato paste
- 1 tablespoon cider vinegar
- 1 teaspoon chipotle powder (1/2 t.smoked paprika + 1/2 t. cayenne)
- 1/2 teaspoon cumin
- 1/8 teaspoon finely crumbled mexican or other oregano
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
