peanut butter & coconut butter spread
My copycat rendering of Earth Balance brand 'Coconut and Peanut Butter Spread'. In case of peanut allergies you can substitute another nut/seed butter such as almond, cashew, flax, etc. The sugar and salt are optional if you are watching your intake of either. The proportion of peanut butter/coconut butter is estimated and I used approximately a 65/35 ratio. Adjust proportions as desired. The major change made to the recipe was replacing coconut oil with coconut butter (Artisana brand). I must warn you that coconut butter is expensive therefore I make small batches of this spread to reduce $$.

Ingredients
- 1/4 cup organic peanut butter
- 1/4 cup coconut butter spread (tested with raw, organic coconut butter)
- - agave, honey, cane sugar, brown sugar, etc., to taste for sweetening
- - salt, to taste (a small amount of smoked salt is good, too if you want something extra special!)
How To Make peanut butter & coconut butter spread

Step 1Use a fork to combine all the ingredients. Taste test. Add more coconut butter for more pronounced coconut flavor. Store in a covered container. Posted 5 August 2014
