I came up with this recipe by tasting as I went...it turned out to be mighty tasty ...I know once it is refrigerated for a day or two, it will be even better...my husband is going to love it on his burgers and sandwiches...I think it could even be used as a dip...enjoy! Update: This spread does make a delicious veggie dip...my sis and mom came to visit and we tried it on sliced cucumbers and cauliflower...delish! Mom took what was left with her...guess that's saying something...

Ingredients

  • 3/4 cup mayonnaise
  • 3 ounces roasted red pepper in jar - what i used would be equivalent to 1 whole pepper.
  • 2 cloves garlic
  • 1/2 teaspoon each - salt & pepper or to taste
  • 1/4 teaspoon thyme, dried
  • 1 tablespoon dried parsley

  • Step 1
    Place everything into a food processor and pulse until peppers are finely chopped and garlic is minced. Place in an enclosed container and refrigerate for at least 2 hours before using.
