bacon, egg, cheese ( trilby ) spread

I first had this spread at my Nieces wedding shower...I had to have the recipe, so the nice gal that made it, was happy to shared and I've been making it ever since...I have no idea why the name "Trilby"...but that's what she called it. I added my own twist to it, so this is my version... I made it today for a snack,to tide over my troops... as I had a lot of cooking and baking to do for Easter...they didn't complain one bit, as they love it... Enjoy!

Ingredients

  • 6 - hard boiled eggs - peeled and mashed
  • 4 - green onions, chopped
  • 1/4 - 1/2 cup real bacon bits, or cooked and crumbled bacon
  • 8 ounces shredded, sharp cheddar cheese
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 1/2 teaspoons dried parsley
  • 1/2 - 3/4 cups mayonnaise
  • - assorted crackers

How To Make bacon, egg, cheese ( trilby ) spread

  • Step 1
    In a bowl, mash the hard boiled eggs. Add the rest of the ingredients - minus crackers. Mix until well blended. Add enough mayonnaise for a spreadable consistency...
  • Step 2
    I garnish with more bacon bits and sliced green onions. Enjoy!
