Ingredients
- 2 cups (about 3 medium) ripe tomatoes, diced
- 1/2 cup yellow bell pepper, diced
- 1 cup (about 2) ripe peaches, peeled and diced
- 3 tablespoons jalapeno pepper, seeded and minced (see note)
- 1/2 cup sweet onion, diced
- 3 tablespoons fresh cilantro, minced
- 1 teaspoon salt
- 3 tablespoons balsamic vinegar

Step 1Mix all ingredients together, cover and refrigerate for 1 hour.
