Ingredients

  • 1 can whole kernel corn
  • 1/2 cup red onion (chopped)
  • 1 medium green pepper (chopped)
  • 1 medium red pepper (chopped)
  • 1 medium orange or yellow pepper (chopped)
  • 1 bunch cilantro, fresh
  • 1 teaspoon sea salt (or to taste)
  • 1 to 2 tablespoons white balsamic vinegar
  • 1 to 2 tablespoons olive oil
  • 1/2 medium lime
  • 1 serrano or jalapeno pepper (finely chopped)

How To Make corn salsa

  • Step 1
    Drain corn and pour into a large mixing bowl. Add chopped onion.
  • Step 2
    Add chopped peppers. Add chopped, or shredded, the desired amount of cilantro to bowl.
  • Step 3
    Season with sea salt. Add balsamic vinegar and olive oil. Squeeze 1/2 lime over mixture. Add finely chopped serrano or jalapeno pepper and mix throughly into salsa. -
