Ingredients
- 16 ounces frozen corn, thawed
- 2 cans black olives, sliced, drained
- 1 medium red bell pepper, chopped
- 1 small onion, chopped
- 5 cloves garlic, minced
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 3 tablespoons vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 medium avocados, chopped
How To Make avocado salsa

Step 1In a large bowl, combine corn, red pepper and onion.

Step 2In a small bowl, combine garlic, oil, lemon juice, salt and pepper; mix well. Pour over corn mixture; toss to coat. Refrigerate overnight.

Step 3Just before serving: stir in chopped avocado into salsa.
