Ingredients
- 8 cups chicken broth
- 2 cups olive oil
- 1 medium onion
- 6 cloves garlic
- 1 tablespoon ancho chile powder
- 2 tablespoons tamarind paste
- 1/2 cup brown sugar
- 1 cup fresh pineapple chopped
- 1 teaspoon salt
- 3/4 cup ketchup
How To Make tamarind pineapple bbq sauce

Step 1Place chicken stock in a medium saucepan over high heat and reduce to four cups. Heat olive oil add onions and garlic and cook until soft. Add the chile powder and cook 2 more minutes.

Step 2Add the reduced stock and bring to a simmer, whisk in tamarind,brown sugar,and ketchup. Add in pineapple and simmer 45 minutes.

Step 3Place mixture in food processor and then strain. Put in saucepan and cook another 15 minutes until thickened. Season with salt. Place in jars and water bath 15 minutes.
