Tamarind Pineapple BBQ Sauce
8 cchicken broth
2 colive oil
1 Tbspancho chile powder
2 Tbsptamarind paste
1/2 cbrown sugar
1 cfresh pineapple chopped
How to Make Tamarind Pineapple BBQ Sauce
- Place chicken stock in a medium saucepan over high heat and reduce to four cups. Heat olive oil add onions and garlic and cook until soft. Add the chile powder and cook 2 more minutes.
- Add the reduced stock and bring to a simmer, whisk in tamarind,brown sugar,and ketchup. Add in pineapple and simmer 45 minutes.
- Place mixture in food processor and then strain. Put in saucepan and cook another 15 minutes until thickened. Season with salt. Place in jars and water bath 15 minutes.
