1In a medium bowl, whisk together yolk, lemon juice, garlic and salt. While whisking, add canola oil a few drops at a time. When it turns foamy and starts to thicken, start pouring oil in a stream. Once canola oil is incorporated; slowly whisk in the olive oil.
2Add 1 TBS preserved lemon, mix in and taste. Adjust with more lemon juice, preserved lemon and salt as desired.
