Apples may be omitted, and the tomatoes and onions used only.

Ripe tomatoes can also be used instead of the green tomatoes.

I don't recall where I got this recipe, but how it is written is how it is written.

How to Make Onion Catsup


  1. Use equal quantities of onions, green tomatoes and apples. For the salt use 1 TBS to 3 lbs of the mixture.
  2. Arrange slices of onions, green tomatoes and apples in alternate layers in a earthen ware vessel, sprinkling salt liberally between layers. Allow to stand overnight, then drain. Pass them through a fine cutter of the food chopper. Put into a preserving kettle and add enough vinegar to cover, add spices and let simmer slowly until ingredients are cooked, and the consistency of catsup.
