fresh asian plum sauce
There is this great Chinese restaurant that serves the best plum sauce and I could never find a packaged plum sauce that even came close. Once I made this one I found out why. It is made by scratch. This sauce is almost identical to the plum sauce at China Fair. Yum

Ingredients
- 3 cups brown sugar
- 2 cups sugar
- 1 1/2 cups apple cider vinegar
- 1 cup finely chopped onion
- 4 tablespoons finely chopped sweet chili pepper
- 2 tablespoons mustard seed
- 1 tablespoon salt
- 4 cloves garlic minced
- 2 tablespoons fresh ginger minced
- 10 cups fresh pitted chopped plums
How To Make fresh asian plum sauce

Step 1Mix all ingredients together in large pan. Bring to a boil and reduce to a simmer and simmer 2 hours.

Step 2Strain through a fine mesh strainer pressing pulp to get our as much juice as possible.

Step 3Ladle into jars and process in water bath for 20 minutes. If not canning store in fridge.

Step 4Makes about 4 pint jars
