ed's buffalo wings and sauce!
This is a version of wing sauce I've used in several of the restaurants and catering venues,casinos I've worked at over the years and it always got rave reviews,hope you get to use this in time for the big game and enjoy it too!! :)

Ingredients
- 1/2 cup hot sauce/frank's
- 3 tablespoons butter, unsalted
- 1 tablespoon brown sugar, light
- 2 tablespoons apple cider vinegar
- 1 tablespoon sriracha sauce or tabasco sauce
- 1 tablespoon roux
- 1/2 cup water
- 1 cup flour, seasoned
- 15-20 medium chicken wings/tips removed and cut in half

Step 1In a non-stick pan melt the butter then add the hot sauce,Tabasco or Sriracha sauce,cider vinegar and bring to a simmer. Whisk in the roux then slowly whisk in the water until all is dissolved and well incorporated,smooth.

Step 2I brine mine overnight in salted water,parboil them for 10 minutes,drain and pat dry with paper towels then dust them with seasoned flour, bake them in a 450 oven for 25-30 minutes or until crisp. If you want you can flip them over 5-10 minutes before the finish to get a crust on the other side,I didn't bother.

Step 3Put the wings in a large mixing bowl,toss with the sauce to coat evenly,serve with blue cheese dressing,carrot and celery sticks. Enjoy!! :)
