easy sweet and sour sauce

I realized I didn't have spaghetti sauce one night after I had already thawed the meatballs for dinner and had to come up with something quick. I'd never made sweet and sour sauce before but decided to "wing it" and see what happened. This was fast, easy, and turned out surprisingly wonderful! Now we make it on purpose all the time! Use over meatballs, chicken, pork, rice, noodles... you name it. It's incredibly easy!

Ingredients
- 1 can pineapple chunks (with juice)
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 tablespoon minced garlic
- 1/2 cup vinegar
- 1/2 cup brown sugar, firmly packed
- 1/2 - grated peeled carrot
- 2 teaspoons soy sauce
How To Make easy sweet and sour sauce

Step 1In a saucepan combine 1/2 the pineapple chunks, all the pineapple juice, and all other ingredients, be sure to whisk cornstarch smooth so there are no chunkies. Boil until thickened, stirring constantly. (about 7 minutes) Remove from heat and pour over your choice of stuff, or use to dip fried won tons in etc. Yum!
