Ingredients
- 1 teaspoon mustard seed
- 1 teaspoon dill seed
- 3 tablespoons kosher salt or pickling salt
- 3 cups cucumber, diced
- 1/2 cup pepper, yellow diced
- 1/2 cup pepper, red diced
- 1 small onion diced
- 1 cup white vinegar
- 1 teaspoon celery seed
- 1 1/2 cups white sugar
- 1 pinch tumeric
- 4 ounces chile diced, mild
- 3 tablespoons cornstartch
- 3 tablespoons dark molasses
How To Make cucumber relish

Step 1Finely dice vegetables. Mix and place in a bowl. Add the salt. Cover with ice water and let sit for a minimum of one hour.

Step 2Drain well. Rinse with water and drain again. Squeeze out all excess water. Use an emulsion mixer to your desired consistency.

Step 3In a saucepan heat all other ingredients to a boil. Add vegetables that have been drained. Boil five more minutes. Turn down and let simmer 20 more minutes.

Step 4If canning, place into your jars with lids and place in boiling water for ten minutes. Serve cold. Also good poured over a block of cream cheese and served on crackers.
