How to Make Cucumber Relish
1Finely dice vegetables. Mix and place in a bowl. Add the salt. Cover with ice water and let sit for a minimum of one hour.
2Drain well. Rinse with water and drain again. Squeeze out all excess water. Use an emulsion mixer to your desired consistency.
3In a saucepan heat all other ingredients to a boil. Add vegetables that have been drained. Boil five more minutes. Turn down and let simmer 20 more minutes.
4If canning, place into your jars with lids and place in boiling water for ten minutes.
Also good poured over a block of cream cheese and served on crackers.
