Perfect for a hot dog on the grill!

Ingredients

  • 1 teaspoon mustard seed
  • 1 teaspoon dill seed
  • 3 tablespoons kosher salt or pickling salt
  • 3 cups cucumber, diced
  • 1/2 cup pepper, yellow diced
  • 1/2 cup pepper, red diced
  • 1 small onion diced
  • 1 cup white vinegar
  • 1 teaspoon celery seed
  • 1 1/2 cups white sugar
  • 1 pinch tumeric
  • 4 ounces chile diced, mild
  • 3 tablespoons cornstartch
  • 3 tablespoons dark molasses

How To Make cucumber relish

  • Step 1
    Finely dice vegetables. Mix and place in a bowl. Add the salt. Cover with ice water and let sit for a minimum of one hour.
  • Step 2
    Drain well. Rinse with water and drain again. Squeeze out all excess water. Use an emulsion mixer to your desired consistency.
  • Step 3
    In a saucepan heat all other ingredients to a boil. Add vegetables that have been drained. Boil five more minutes. Turn down and let simmer 20 more minutes.
  • Step 4
    If canning, place into your jars with lids and place in boiling water for ten minutes. Serve cold. Also good poured over a block of cream cheese and served on crackers.
