Ingredients

1 tsp
mustard seed
1 tsp
dill seed
3 Tbsp
kosher salt or pickling salt
3 c
cucumber, diced
1/2 c
pepper, yellow diced
1/2 c
pepper, red diced
1 small
onion diced
1 c
white vinegar
1 tsp
celery seed
1 1/2 c
white sugar
1 pinch
tumeric
4 oz
chile diced, mild
3 Tbsp
cornstartch
3 Tbsp
dark molasses

How to Make Cucumber Relish

Step-by-Step

  • 1Finely dice vegetables. Mix and place in a bowl. Add the salt. Cover with ice water and let sit for a minimum of one hour.
  • 2Drain well. Rinse with water and drain again. Squeeze out all excess water. Use an emulsion mixer to your desired consistency.
  • 3In a saucepan heat all other ingredients to a boil. Add vegetables that have been drained. Boil five more minutes. Turn down and let simmer 20 more minutes.
  • 4If canning, place into your jars with lids and place in boiling water for ten minutes.

    Serve cold.

    Also good poured over a block of cream cheese and served on crackers.
